Meal Plan Monday

Last week was a very hectic week around our house. We didn’t have any big plans, except for keeping a sick grumpy toddler as comfortable as possible. Our little guy came down with a bad cold all of a sudden, and thankfully it left as quickly as it came, but it meant several sleepless nights for everyone. He is well on his way to being 100%, and we all had a great nights’ rest last night!

This week is going to be filled with getting the nursery ready! Digging out and washing all the newborn clothes, and organizing it all. I will also hopefully get to take pictures of the big boys’ bedroom, and show you all the frugal finds we have in there, so watch for that post!

Here is what we are eating this week:

Monday: Gnocchi Florentine (from my new Betty Crocker cookbook!)

Tuesday: Pasta with grape tomatoes (picked fresh from my neighbour’s garden!) and BBQ steak

Wednesday: Hash brown casserole with shredded chicken, and a side salad

Thursday: Grilled chicken fingers with veggie fritters (both of these recipe are from my First Meals by Annabel Karmel cookbook. Yes they are meant for toddlers, but I might as well make enough for the hubby and I to enjoy too!)

Friday: Salmon with rice and broccoli (it seems we have Salmon and rice nearly every Friday! We can’t help it, it’s a family favourite!)

Saturday: Hubby’s turn to cook! He has been dying to make his famous lasagna, so hopefully it’s cool enough to have the oven on for it

Sunday: dinner with my in-laws

I’m hoping to get a chance to do up some of my freezer meals this week. I am only getting more uncomfortable and bigger as the days pass, so it’s now or never for spending a day cooking in the kitchen! Hopefully I can get a decent little stash going, so that it’s easy for my husband to throw something in the oven once this baby arrives and we are too busy and tired to think about dinner. I will make sure to share how that goes if it ever gets done.
