Meal Plan Tuesday

Well, yesterday was a complete bust, and I didn’t get a chance to post our meal plan for the week. No big deal though, I can still post it today :). I also wanted to mention that I am aware I did not post the last bunch of pictures for the #Janphotoaday challenge. I had taken most of them, but I couldn’t be bothered in my sleepless state to upload them all on here. So now I have failed at completing NaBloPoMo and #Janphotoaday. I think I am going to stop doing these…

Here is what we are eating this week:

Monday – sleep deprivation finally took its toll on me yesterday, so we hit McDonalds for dinner before the hubby helped me get groceries

Tuesday – baked chicken breasts with roasted asparagus & sweet potatoes (this is a Nigella Lawson recipe that has become a staple in our house, super yummy)

Wednesday – Greek pasta (I made this up a few weeks ago, and it was awesome, I will try and post the recipe later in the week)

Thursday – Slow cooker Santa Fe chicken (this is a recipe I found via Pinterest)

Friday – pan fried fish with cheesy quinoa cakes (another great Pinterest find!)
