Well I sure hope that the way my week has started is no sign of how the rest of the week will be. My son woke up at 5am today, normally we can get him back to sleep for a bit, but after battling him for an hour I gave up and said we’d just get up for the day (I would prefer to start my day closer to 7am, but oh well). He was not impressed with this idea and yelled “but I want to sleep still Mom!” I didn’t know if I should laugh or cry. Seriously little one? I would love it if you went back to sleep, I have been trying to get you to stay in your bed and go back to sleep. Kids!
It’s a big week in our house, as we made a rather larger purchase on the weekend. We pick up our brand new Grand Caravan this week! My husband is tall, and our 2 year old is getting bigger by the day it seems; the two of them simply do not fit in our Dodge Caliber anymore. So now that we have a car payment back in our budget, things will be getting shuffled around and cut. I am going to talk about budgeting later in the week, when I participate in Women’s Money Week, so make sure you come back for that!
Here’s what we are eating this week:
Monday – Cheddar and red pepper quiche with BLT salad
Tuesday – Turkey kolbassa with whole wheat mac and cheese and garden salad
Wednesday – Spaghetti
Thursday – Veg Head three bean chili (this is the best chili recipe! we like it even better than chili with meat!)
Friday – Tuna casserole with green beans
