Let’s do this Monday!

Another week of meal planning! It feels like I just did this; time is flying by so fast! It’s nearly Mother’s Day, and the weather is warming up which means summer is just around the corner! Before I know it, my baby girl will be turning 1, and my son turning 3! Ok, I might be getting a little ahead of myself there…

Last weeks’ plan got switched around a little. That’s another great thing about meal planning ahead of time, you know what you have in the house for certain meals, which can help keep things flexible! Like last Monday, I felt like garbage, so my husband cooked dinner. He didn’t want to cook what I had down for Monday, so we switched with Thursday and he bbq’d turkey sausages! And than Friday was too hot to have the oven on for tuna casserole, so I made veggie fried rice and Asian coleslaw, which used up some of the veggies we had in the fridge! Meal planning doesn’t have to be set in stone, you can easily look ahead and change things up when you need to!

Here’s what we are eating this week:

Monday – Pita’s with chicken and tzatziki

Tuesday – 3 cheese ham and peas pasta (Food Network Magazine recipe, also found here) – changed it b/c I’m only using 3 cheeses!

Wednesday – smothered chicken with rice and veggies

Thursday – Veg marinara – leaving out the chicken, because its cheaper :)

Friday – tuna casserole (hopefully it won’t be too hot to have the oven on)

This coming weekend is also Mother’s Day, and since I have the best husband EVER it becomes more of a Mother’s Weekend in our house! Can’t wait to see what he has planned, and too also celebrate with my own Mom!
