Meal Planning in the Heat

Here we go again! Another week flown by, and somehow we are in the middle of July. I do love summer, but it has been so hot here that I am over it! I want my cool fall days, wearing jeans and boots with cozy sweaters! Right now we are stuck inside in the air conditioning because it is so hot and humid outside, my kids don’t do well in the heat, and neither do I.

Here is what we are eating this week:

Monday – slow cooker buffalo chicken with garlic green beans (from my garden!) and a garden salad

Tuesday – bbq’d burgers with cucumber salad

Wednesday – spaghetti

Thursday – salisbury steaks with gravy and garlic mashed potatoes

Friday – cheese ravioli in a creamy garlic sauce with a garden salad

How do your meals change in the summer? We try to eat locally and in season, especially from our own veggie garden. But we also try not to use the oven too much. Everything is either stove top (or counter top in the slow cooker) or cooked on the barbeque.

  1. I am in awe of people who actually plan their meals for the whole week…and then stick to that plan! We’re lucky if we decide by 4 p.m. what we’re having each day! Though we actually have a steak marinating in the fridge at the moment…which we were supposed to have yesterday, but then company came and we needed something different!

    1. I can’t imagine life without meal planning, lol. I hate that mad scramble right before dinner time, and shopping without a list of exactly what I need; we’d never stay on budget! It’s so freeing, knowing that spending those 20 minutes at the start of the week means I don’t have to think about dinner the rest of the week.

      I know a lot of people find it boring because they end up not being inspired and make the same meals over and over. But thanks to Pinterest and my Food Network Magazine subscription, I am always finding yummy new recipes. We probably do one new recipe each week!
