Meal Planning – end of summer

Well, it’s the last week of August. That doesn’t really mean much to us, since my kids aren’t in school yet. Our routine stays the same, the days are just shorter and the bbq is used much less. But it does mean that the next few months are jammed pack; weddings, birthdays, and of course Christmas isn’t too far off either. I have tons to do to get ready for my daughter’s first birthday in a month, and my son’s third birthday just two weeks after that…so much frugal party planning to do!

Here is what we are eating this week:

Monday – spaghetti with mushroom meat sauce

Tuesday – fish tacos with ramen coleslaw

Wednesday – thai peanut chicken over noodles (with red peppers, broccoli and yellow peppers)

Thursday – sausages with red peppers (from my garden!!!) and quinoa (still not sure how I will cook it, just plain I guess….)

Friday – pan seared tilapia in a lime chili crust with rice and green beans (the last ones from my garden)
