Meal Plan Monday – Feb 4th 2013

On mornings like this I am very thankful for meal planning. I am also very thankful that I did it all yesterday, and don’t have to attempt it right now! I stayed up a little later than normal to watch the Superbowl, and just as my head was hitting my pillow, my 16 month old daughter woke up, and fought sleep till 1:45am…So I’m running on only a few hours, which means by dinner time tonight I will be exhausted, but I won’t have to think up a meal! Here is what we are eating:

Monday – Crispy beef  over brown rice and a side salad (watch for this recipe this week on the Frugal Healthy Dinner Series)

Tuesday – whole wheat pasta in a creamy tomato basil sauce with turkey and broccoli and a side salad

Wednesday – chicken strips with sweet potato wedges and salad

Thursday – beef tacos with homemade guacamole

Friday – baked lemon fish with rice pilaf and salad

I am also planning to make some granola bars this week too; trying to cut out as much processed and packaged food as we can!
