Last week did not go well with meal planning and shopping. It started out so well with my lasagna, and even my shopping on Monday morning seemed to go well, but somehow it still all fell apart. I spent the same amount as normal, and planned meals for the entire week, and even skipped making my beef stroganoff on Tuesday (made it on Saturday) because we still had lasagna left and ate that again for dinner. Thursday we picked up a few more things, which happens most weeks (see my rant about multiple shopping trips here), we ended up needing other things on Friday, and again on Saturday I found myself running out after dinner to make sure we had enough stuff in for Sunday and today (which I knew was a holiday, but totally forgot that meant stores would be closed). I’m afraid to add up what I spent last week. I know it was way over budget, not too mention it was completely ridiculous that I shopped that many times…Fingers crossed this week is better. I am only planning to shop at Costco and FreshCo tomorrow (weather permitting; it’s supposed to be a wet and snowy day), and hopefully will only need one other shop on Saturday to pick up more fruit for the weekend. If I am buying this much food now, what on earth is it going to be like in 15 years when I have a house full of teenagers?!
Here’s what we are eating this week:
Tuesday: shrimp tacos with guacamole and salsa and roasted cauliflower
Thursday – Mexican loaded sweet potatoes and meatballs
Friday – baked fish with roasted asparagus and linguine
I will probably also make a batch of granola bars, and some salad jars too for my husbands lunches.
Even though I have been meal planning for years, I still have off weeks where it doesn’t run smoothly. You just have to try again next week. Meal planning at first may seen like such a daunting task, but each week it gets easier and easier. For tips on meal planning check out my previous post here.
