Well, after a busy weekend and a successful bridal shower, I am exhausted! But, even as tired as I am, I still sat down and planned out meals for the week and made my grocery list last night. The way I look at it; who knows what tomorrow will bring (my daughter is teething and might just be up all night), and I could be worse off in the morning. Suck it up, and plan those meals! It will make the rest of your week much easier!
The best part about the bridal shower (other than showering my soon to be sister-in-law with gifts) are the leftovers! Lots of meat and veggies and fruit to keep us going for a few days! I also started harvesting from the garden this week (watch for a post on that too), so that’s going to cut my grocery bill too!
Here’s what we are eating this week:
Monday – roast chicken with roasted sweet potatoes and carrots and salad
Tuesday – whole wheat pasta with spinach, mushrooms, and carrots in a tomato sauce
Wednesday – grilled (maybe ever bbq’d!) steaks with grilled asparagus and salad
Thursday – chicken burritos and salad
Friday – grilled salmon and asparagus with brown rice
