I hope everyone had a great weekend, and was able to spend some time with their Dad! We had a great weekend filled with time in the backyard and lots of little treats for my husband, and he even got in a golf game first thing Saturday morning, as I’m sure a lot of Fathers did this weekend.
With an unexpected car repair bill last week, I am looking for anyway possible to spend less this week. Thankfully we have a fairly stocked pantry and freezer, so most meals will be made from those items. With that help, and some decent sales this week, I’m hoping to keep our grocery bill well under $100 for the week (normally its up closer to $120, some weeks even higher).
Here’s what we are eating:
Monday – beef burritos
Tuesday – breakfast for dinner – corned beef hash, eggs, garlic green beans
Wednesday – spaghetti
Thursday – cheese tortellini with veggies in tomato sauce
Friday – grilled salmon with brown rice and garlic spinach (fresh from the garden!)
The garden is growing like crazy, with lots of lettuce and spinach, and maybe I will even be able to pull some green onions this week too! Hopefully I can get a picture of it all, since I haven’t been very good at that this year. As always I am linking up with Laura at Org Junkie. Happy menu planning!
