Well last week sure was exciting, and now this week we are back to normal! My husband is back to work after 10 days off, including our trip to Boston and lots of fun activities with the kids. This week I am going to try changing the kids nap time, which terrifies me as I don’t know how this is going to turn out, and I hate the unknown! The nearly 4 year old only wants to nap some days, and that’s usually after lunch now, while the nearly 2 year old still naps in the mornings…different nap times means we will never be able to get out of the house, and that’s not ok. So, today we are going to try nap time after lunch, for both of them…which means I am taking both kids to Costco and the grocery store when they used to nap, which could be the worst idea I have ever had.
This week I am buying meat and having it do double duty, and hoping the meals don’t end up tasting the same! With very humid days, and chances of rain, I don’t want to put the oven on, and we won’t be able to bbq either, so I’m relying on stove top and the slow cooker! Here is what we are eating:
Monday – slow cooker pulled beef over brown rice with salad
Tuesday – Catalina Taco salad made with ground chicken
Wednesday – pulled beef sandwiches (leftover meat from Monday) with salad
Thursday – home made chicken burgers (anyone have a fav recipe?) with grilled red peppers
Friday – grilled cheese sandwiches and tomato soup
