Today is Remembrance Day (or Veterans Day in the US), I hope you all paused for a moment of silence today to give thanks to those who fought to keep our countries free, and those that are currently sacrificing.
Life is busy as usual around here, and we are back into Birthday fever with my husband and mother both celebrating this week. So Friday night I won’t be cooking as we head out to celebrate my husband’s big day, and Saturday we are having my family over to celebrate my mom’s.
So here is what we are eating this week (revised from an earlier version):
baked chicken drumsticks with roasted potatoes and broccoli pierogies with peppers and carrots and salad
Mexican Tortilla Soup (made from home made chicken stock) baked chicken drumsticks with roasted potatoes and broccoli

Friday – dinner out
Saturday – still not sure…pulled pork and coleslaw? ham and mashed potatoes and BLT salad? Who knows…
I posted a meal plan, and then plans for the week changed, so I updated it by switching some meals around. This might be my favourite part of meal planning; no need to panic if something comes up, you can easily swap menus!
