The meal plan didn’t make it up yesterday because I was busy celebrating my 7th wedding anniversary! We left all three kids with Grandma and went out for a really nice dinner. It was wonderful. Drinking wine, eating incredible food, and talking with the man I love without kids interrupting. I couldn’t have asked for a more perfect evening!
The rest of the weeks dinners won’t be as fancy, but they are frugal and healthy and delicious!
Here is what we are eating this week:
Monday – dinner out
Tuesday – beef tips in gravy with basmati rice and broccoli
Wednesday – chicken quesadilla and veggies
Thursday – chicken burgers with salad
Friday – salmon with rice and corn
I’m also planning on making my famous oatmeal chocolate chip cookies. I’m thinking of changing the recipe up a bit, decreasing the sugar and adding wheat germ…I’ll let you know if it turns out and what revisions I’ve made!
