Meal Plan Monday – January 26th 2015

We are back on the healthy eating train this week! Last week wasn’t awful, but there were too many sweet treats and far too much takeout. When my husband’s only request for groceries is “something healthy”, I know I need to get my butt in gear and really plan better! A trip to Costco and No Frills, and only $140 spent, we have enough healthy snacks and ingredients for meals to last well into next week. I even prepped it all as soon as I got home.

I thought I would share with you what I have ready for the week for all our meals and snacks, and not just dinners.

Yogurt (Greek and probiotic)- I was on a streak of making my own, but I bought it this week, and am opting to make granola and muffins instead. Great high protein snack for my husband and I after work outs, and the kids eat one, sometimes two, each morning with their toast.

Humus – The double packs were on sale at Costco this week! Ready for lunch and snacks with veggies and chips

Veggie sticks – peppers, carrots, celery, cucumbers. I love prepping them all right after buying them. It makes it easy to pack my son’s school lunch, easy to grab for a snack, and for my hubby to add to his leftovers to take to work.

Fruit – bananas, apples, and strawberries, and sliced up lemons for my water

Muffins – last week I actually bought muffins, that’s how off my game I was! Back to normal this week making my vanilla banana whole wheat muffins

Pretzels – I found the cutest alphabet pretzels! The kids love them, and they are a great way to help my 3 year old daughter work on learning her letters

As for dinners, here is what we are eating this week:

Monday – chicken burritos (the other week, bone in chicken breasts were on sale. I bought 2 big packs and poached them and shredded the meat. They are portioned out in freezers bags waiting for quick dinners!)

Tuesday – tortellini with tomato sauce

Wednesday – home made pizza

Thursday – cheese burgers and veggie sticks

Friday – perogies sauteed with veggies

I feel so much more relaxed with the busy week ahead, knowing that so much of my work is done and my dinners are all planned out! Prepping the veggies only took me half an hour, and my meal plan barely took 20 minutes! It’s not too late for you to plan out your week too!
