As you know by now, we love yogurt in my house. When we aren’t making it ourselves, we are buying it in large quantities. Breakfast, mid day snacks, post workout, and often before bed; it is eaten by us all, all day long! I bake with it, and add it to smoothies too! But probably my favourite way to eat it, is topped with fresh fruit and granola.
Store bought granola is expensive, and filled with preservatives and tons of sugar! It is supposed to be a healthy snack, but often it isn’t. Making it yourself is super easy, and inexpensive too. Plus, you can control all the ingredients! The favourite flavour in our house right now is Almond Vanilla, and today I’m sharing my recipe with you!
Easy Almond Vanilla Granola
2 cups oats
1 heaping cup roughly chopped raw almonds
1/2 cup coconut flakes
1/4 cup honey
1 tbsp coconut oil
1 tsp vanilla
Preheat oven to 325 degrees. In a large bowl, mix the oats, almonds and coconut flakes. In a small sauce pan, heat the honey, coconut oil and vanilla over low heat just until melted. Pour the mixture over the oats, and mix until combined. Spread the mixture out onto a cookie sheet, and bake for 20-25 minutes, stirring every 8-10 minutes. Keep an eye on it, so that you can get it as toasted as you like. Let cool on the cookie sheet; as it cools it will start to clump and stick together. Once cool, scrape off the cookie sheet, breaking it up as much or as little as you like, and store in an air tight container.
Almonds on their own are such a great snack, full of protein, fiber, calcium, zinc, and antioxidants, but they are even better roasted with honey and coconut in this delicious granola!
