How is it possible? The last week of February already. I know it is a short month, but come on! It has just flown by! Spring will be here before we know it…right? We got dumped on again over the weekend with another foot of snow, and the temps today around -30 with the windchill. I’m sure we are all pretty much over it, so I’m trying not to complain, even though I heard on the news that this was the coldest February in Ontario in over 100 years! The sun is out today, I’m putting an extra layer on everyone, and we are just trying to make the best of it…while still grumbling just a little.
Trying to balance comfort food with loads and loads of veggies, to keep everyone healthy this week! Here is what we are eating:
Monday – kolbasa and veggie stir fry with peppers, carrots, and green beans, and homemade mac and cheese
Tuesday – ham with mashed potatoes and carrots
Wednesday – homemade pizza (I finally have a good homemade pizza dough recipe that my sister-law gave me!)
Thursday – whole grain chicken strips with easy potato skins and roasted parmesan cauliflower
Friday – fish sticks with homemade baked sweet potato fries and green beans
I’m hoping to finally get my DIY face wipes/makeup remover post up this week. I’ve been using them for a while now, and I LOVE them! And maybe even finally share my favourite muffin recipe too. I know I have talked about them, I make them just about every week, sometimes twice! But I don’t think I have ever shared the recipe with you, so watch for that too. Happy menu planning!
