Thrilled! I’m thrilled to be back to meal planning, and sharing those plans with you! My husband had been taking care of dinner the last couple weeks, but he is back to work now, and prior to that, I was too pregnant to really think straight and plan ahead! I’m so happy to be back to my normal routines!
Since I’ve got a 3 week old that eats frequently, I’m planning dinners that I can prep earlier in the day, and I’m taking full advantage of my slow cooker too!
Here’s what we are eating this week:
Monday: pizza and salad
Tuesday: shredded chicken tacos (made from roasted chicken I’m cooking in the morning)
Wednesday: slow cooker pot roast with veggies and roasted potatoes
Thursday: baked tortellini casserole with green beans
Friday: baked fish with rice and roasted cauliflower
