The kids are back to school! Is anyone as excited as I am? Yes, that means packing lunches again, and rushing out the door each morning, but it also means I’ve got a much quieter day with just the little ones at home! If you need ideas for those school lunches, make sure you check out my post on what my kids eat. I’ll do another one in a couple of weeks to see how things have changed, because if your kids are anything like mine, they go through phases of wanting the same thing every day for weeks, and then never wanting to see that same lunch again for weeks! Gotta mix it up!

And like so many of you, my hubby and I are in a push to get back to our pre-Holiday exercise and eating habits, so we are eating extra clean and healthy this week. We even finished the Christmas break off with a dinner out (consisting of way to many french fries and the best gravy and ice cream!) and a stop at Starbucks after Mass, for lattes and cake, and ordered pizza for dinner last night! Way too much, and our stomachs are not impressed at all! Time to clean things up again!
Here’s what we are eating this week:
Monday – Turkey and Zucchini Casserole (a new recipe, trying it for the first time with the kids! From the HASFit Instagram page)
Tuesday – Taco Tuesday! (chopped up chicken breasts, whole wheat wraps, lots of corn and fresh tomatoes and lettuce!)
Wednesday – My Famous Spaghetti with whole wheat pasta and extra veggies (onions, garlic, zuchinni, and mushrooms) in the sauce
Thursday – baked chicken with roasted veggies (green beans, carrots, and peppers) and rice
Friday – baked fish, crispy potatoes, and broccoli
I also made muffins and prepped carrots sticks and cucumber slices for easy healthy snacking and kids’ lunches for the week.
