Meal Plan Monday – Feb 13th 2017

We are snowed in! I’m ahead of schedule this week with shopping and planning! Ontario got hit with lots of snow this weekend. I managed to get out Saturday night for some groceries, and that was good because Sunday the roads are awful. Like, we didn’t even attempt going to Mass, which we never miss. We’ve got about a foot of snow just on Sunday, and that’s on top of the 6 or 7 inches we got on Friday and Saturday! So thankfully I planned and shopped, and we are good for a little while.

Here is what we are eating this week:

Sunday (last night) – Turkey Zucchini Casserole  (this was delicious!!!!)

Monday – Lightened up beef stroganoff with extra veggies on the side

Tuesday – pork cutlets, crispy potatoes and roast cauliflower

Sunday (last night) – Chicken Enchilada Casserole 

Thursday – Veggie Chili

Friday – baked fish, mac n cheese, and broccoli

My son, who is 7, also made some hurried Treasure muffins from a kids cookbook he has. They are coconut oatmeal muffins, and the buried treasure part is a spoonful of low sugar jam hidden in the middle! YUM! And, I prepped lots of veggies for the week for easy and healthy snacking!
