Who else sent their kids back to school today?! March Break is over, and we are thankfully back to our regular routine! Dinners got a little messed up last week, and we ended up at a family birthday party, so I never got to make that Mexican Rice Casserole, so it’s going on this weeks’ menu plan, and I will share the recipe afterwards (I’m making it up and will let you know how it turns out!)
Here is what we are eating this week:
Monday – cheese burger macaroni with loads of sauteed veggies on the side
Tuesday – chicken tacos with corn and fresh veggies as toppings
Wednesday – chicken drum sticks with mashed potatoes and broccoli
Thursday – Mexican rice casserole and salad
Friday – baked fish with crispy potatoes and roasted veggies
I whipped up some banana muffins today for the kids lunches, and my husband cut up veggies on the weekend for us to snack on. Happy meal planning!
