Last day of July! That means I’m half way through summer vacation with all 4 kids at home! It hasn’t been nearly as bad as I thought, but we’ve kept them busy with camps and swimming lessons and promises of Canada’s Wonderland and Legoland in the near future! I hope you all have been enjoying your summer so far.
Week one of our ultra clean eating went really well. My husband stuck to his P90X nutrition plan, and actually enjoyed it! Thankfully it wasn’t too far off how he had been eating. And our dinners were fantastic. We continued the clean eating today too with an incredible dinner, and this weeks meal plan is looking good! Eating healthy doesn’t have to be boring and gross! Here is what we are eating this week:
Monday – My famous spaghetti sauce (over whole wheat pasta for the kids, and over spaghetti squash for my husband and I. SO GOOD!)
Tuesday – steak fajitas with peppers in whole wheat wraps
Wednesday – big salads with chicken, black beans, corn, tomatoes, and cucumbers
Thursday – turkey sausage tray bake with carrots, peppers, zucchini and mushrooms
Friday – shrimp tacos in whole wheat wraps
Sounds like a mighty tasty week, totally kid friendly healthy dinners that won’t cost you a fortune! It’s why you come to this blog, right?
