IT’S THE LAST WEEK OF SUMMER VACATION!!!!!!!
Sorry, I’m just a tad excited to get the older kids back to school next week. Excited for routines again. Excited to have a quiet house during the little ones nap time. Excited for the big ones to get back to their friends and to stop the endless bickering that currently has taken over our house.
And also excited to find a little more time for writing! I have so many drafts and so many ideas and so many projects from the summer to share with you all! With four kids around all day, it was difficult to get a few minutes to write up a short post like this, let alone anything requiring more thought and editing and creating cute pictures.
I’m also excited that the cooler temps have started already. Some years when school goes back it still feels like summer, but this week is a little cooler in our area, and that has me excited for fall!
Ok, now let’s get down to business. I feel like so many of my meal plans look the same, but I’m going to share them anyways. Every meal you cook doesn’t have to be super fancy or from a complicated recipe. In our house, the simple meals are the most loved by everyone. A lean protein, lots of veggies, and a little bit of carbs keep everyone happy and full. And it’s so easy to mix and match according to your tastes. Even picky eaters can follow that simple formula! Shop whats on sale or in season and your meal plan will practically plan itself! And of course, keep the family favourites in there too (like taco and spaghetti!)
Here is what we are eating this week:
Monday – My Famous Spaghetti (with lots of mushrooms and zucchini)
Tuesday – Tacos (chicken with loads of veggies in whole wheat tortillas
Wednesday – 5 bean veggie chili (same as the linked recipe, except I now use 1 can black beans and 1 can bean medley, which my kids seem to like better)
Thursday – Turkey sausage stir fry – with red peppers broccoli and served over rice
Friday – Baked fish with roasted cauliflower and carrots
