Once again, I’ve got so many posts in draft form (including a recipe from something we ate tonight!), but these meal plan posts are the only ones that ever seem to get posted. I promise more, better quality stuff is coming!
But for now, here is our meal plan for the week:
Monday – Steamed mussels, whole wheat pasta with tomato/mushroom sauce, homemade garlicky cheesy whole wheat bread sticks (recipe coming soon!) and a little Pinot Noir too
Tuesday – Tacos! Ground turkey with homemade taco seasoning and corn, fresh veggie toppings, all in whole wheat tortillas
Wednesday – Slow cooker beef stroganoff (the trick to this is remembering to put it on early in the day, which I always seem to forget!) with peas and mushrooms
Thursday – Meatballs, rice pilaf and steamed broccoli
Friday – A mix of baked fish and popcorn shrimp (because who doesn’t love popcorn shrimp?!) with roasted potatoes and carrots
