If you follow me on Instagram, you would have seen my post early this morning. My kids slept in a little, and I had complete quiet to enjoy my breakfast and coffee. It was wonderful! They slept in an extra 15 minutes, which was more than enough time for me to make my shopping list and plan the weeks’ dinners. Yes you read that right. 15 minutes!
Meal planning doesn’t have to be difficult. Stick to what you family likes, repeating some dinners each week is ok. And plan around whats on sale at your fav store. This week extra lean ground beef and pork chops were on sale, so that’s what I’m buying! You will save so much money doing it that way, and you will save time and have less stress each week night when dinner time arrives. It doesn’t need to be a dreaded time of the day, so take a few minutes to plan ahead.
What we are eating this week:
Monday – mince and totties (it’s Scottish, it’s like a deconstructed Sheppard’s pie)
Tuesday – big salads with chicken nuggets (it’s a great short cut, big salads for my husband and I and the kids eat the nuggets and veggies I cut up for the salads!)
Wednesday – My famous Spaghetti
Thursday – baked pork chops and roasted veggies (we tried these Korean style pork chops a couple of weeks ago and they were incredible!)
Friday – baked fish with steamed broccoli and crispy potatoes
