Happy New Year everyone! I hope it was a blessed Holiday season for you all. We had a great Christmas, and somehow managed to avoid anyone being sick on Christmas Eve, Christmas Day, Boxing Day, and New Years Day. The rest of the time though, we were hit every few days with another kid getting a stomach bug. It was exhausting, but they didn’t miss out on any fun, since it was too cold to play in the snow anyways. So this week, we are focusing on having some fun now that everyone is feeling better. Plus, we’ve got a certain little guy turning 2, so there will be some sort of party for our youngest!
So, is everyone just planning on eating salads all week? I feel like most people start off the New Year with the best intentions, eating healthy and getting active, which is great! But I also know that so many people start off much too drastically, making crazy life changes that are nearly impossible to maintain. Start off small with working out, and gradually ease into the healthier foods. Do what works for you and your family, not what you think everyone else is doing!
If you need some easy, healthy, kid approved, well balanced meals, look no further! I try to portion our dinners with a lean protein two servings of veggies and a small amount of carbs (if any). Here is what we are eating this week:
Tuesday – turkey honey garlic sausages, mashed potatoes and honey glazed carrots (made by the 6 year old from her new cookbook!)
Wednesday – Turkey Tacos (on whole wheat wraps, with corn and lettuce and tomatoes)
Thursday – Big salads
Friday – Veggie Chili (5 kinds of beans with tomatoes and peppers too)
Saturday is when we will likely celebrate our youngest’s birthday. So I guess the Birthday Boy gets to pick? He doesn’t eat much, so pizza, chicken nuggets and yogurt drinks would be on the menu if he had his way, lol! Make sure you follow me on Instagram, I’m sure I will share more about all that on there.
