Meal Plan Monday – January 22 2018

Happy Monday friends! This is our real first week back to our completely regular schedule. Which I am excited about, but also, that means the vacation is over for real! My husband took part of last week off, and we snuck away for a couple days to celebrate our 10th wedding anniversary. It was magical! We headed to Niagara on the Lake, which is a quiet little town at the centre of Ontario’s wine region. We stayed at a gorgeous Inn, hired a private driver to tour us around several wineries, dressed up and ate at fancy restaurants; it was kid free bliss! The calm quickly ended though, as the kids had a day off from school last Friday, and we had a busy weekend filled with the usual hockey and Mass, but added in a Scout camping trip, and a birthday party. Somehow all the laundry still managed to get done, and the house is reasonably tidy too! Though we did hit the drive thru for dinner both night, because we were just beat!

Back to normal means the oldest two kids are back to school, I’ve already meal planned and shopped for the week. I’ve got one kid napping, and one watching tv. I’ll get a little blogging done while all is quite and try to sneak in a workout too. And if I’m lucky, I’ll have a bit of time to watch last nights episode of The Resident!

Here is our dinner plan for the week:

Monday – Breakfast for dinner (turkey breakfast sausages, scrambled eggs, blistered cherry tomatoes and fruit smoothies for the kids)

Tuesday – Taco salad (the kids love to help make this: lettuce, cooked ground chicken, corn, black beans, salsa, sour cream, and some crumbled nachos on top)

Wednesday – slow cooker honey sesame chicken, served over rice with roasted cauliflower

Thursday – Pierogies and broccoli

Friday – Baked fish with lemon sauce, crispy potatoes and peas

My husband is planning on making protein bars this week, and he made the most amazing banana bread this weekend, and we’ve all requested another loaf! I promised the 3 year old we’d bake something too, I’m thinking it’s time for my famous healthy oatmeal cookies!
