Its February, finally! Was it just me, or did January and its awful weather just dragged on and on?! Though this month isn’t treating my part of Ontario very well so far; more snow this past weekend and -20 temps again today!
I’ll get right to this weeks’ meal plan, as I’ve got lots of other great blog posts to try to work on during nap time today!
Monday – Beef stir fry with broccoli and carrots over rice
Tuesday – Taco Tuesday! Taco salads with chicken and corn and black beans
Wednesday – Turkey Chili and homemade bread (using turkey instead of ground beef with lots of tomatoes and beans. Typically turkey chili is made with a white sauce, but I love to use it in my regular recipes instead of beef!
Thursday – Hot dogs, oven fries and veggies sticks. The kids have been asking for hot dogs, so I guess I’ll surprise them! All beef wieners on whole wheat buns with lots of veggies on the side is balances enough I guess.
Friday – Fish tacos
I’m also planning on baking some home made crescent rolls and muffins for the kids lunches.
